Jhoanna’s KFC ENCORE BOWL
A vibrant, no-waste bowl turning leftover KFC chicken into a flavor-packed meal.
Ingredients (serves 2)
- 2 cups cooked jasmine rice
- 2 leftover KFC chicken thighs or drumsticks, shredded
- 1 small carrot, julienned
- ½ red bell pepper, thinly sliced
- ½ cup broccoli florets
- 2 cloves garlic, minced
- 1 tbsp vegetable oil
- 2 tbsp soy sauce
- 1 tbsp honey
- Zest and juice of 1 lime
- 2 tbsp mayonnaise
- 1 tsp sriracha (optional)
- Fresh cilantro leaves, for garnish
- Sesame seeds, for garnish
Preparation Directions
1. Prep chicken
• Remove skin and bones; shred meat into bite-sized pieces.
2. Cook veggies
• Heat oil over medium-high heat. Sauté garlic 30 sec. Add carrot, bell pepper, and broccoli; cook 3–4 min until tender-crisp.
3. Warm chicken
• Toss shredded chicken into the pan; stir 2 min.
4. Make sauce
• Whisk soy sauce, honey, lime zest, and juice. Pour over chicken and veggies; stir to coat.
5. Assemble bowls
• Divide rice between two bowls. Top with chicken-veggie mix.
6. Finish & serve
• Mix mayo and sriracha; drizzle over bowls. Garnish with cilantro and sesame seeds. Serve with lime wedges.
