Jhoanna’s “Crispy Cluck pasta”
Ingredients (serves 2)
- 2 cups cooked pasta (penne or fusilli)
- 2 leftover KFC chicken thighs, shredded
- 1 tbsp olive oil
- 2 cloves garlic, minced
- ½ cup cherry tomatoes, halved
- 1 cup baby spinach
- ½ cup heavy cream
- ¼ cup grated Parmesan cheese
- 2 tbsp chopped fresh basil
- Salt and pepper to taste
- Red pepper flakes (optional)
Preparation Directions
1. Prep pasta: Reheat pasta in boiling water for 1 minute, drain, and set aside.
2. Sauté aromatics: In a skillet over medium heat, warm olive oil. Add garlic; cook until fragrant (30 seconds).
3. Add chicken & tomatoes: Toss shredded chicken and cherry tomatoes. Cook 2–3 minutes until heated through and tomatoes soften.
4. Wilt spinach: Stir in baby spinach; cook until just wilted.
5. Create sauce: Pour in heavy cream; bring to a gentle simmer. Stir in Parmesan until melted and smooth. Season with salt, pepper, and red pepper flakes.
6. Combine pasta: Add pasta; toss to coat evenly. Cook 1–2 minutes more until the sauce clings to each piece.
7. Finish with basil: Remove from heat; stir in chopped basil.
